The Golden Rules of Preparation

Steep the tea for 2–3 minutes, depending on the desired strength and variety: a shorter steep gives a light, refreshing flavor, while a longer one reveals fuller, slightly grassy notes. (Temperatures above 90°C release tannins, which increase bitterness.)
