Coffee crinkle cookies

These coffee-flavored cookies are the perfect sweet treat for any occasion. Easy to make and irresistibly delicious, they can be stored for up to 10 days—if they last that long!
Ingredients (for 40-45 cookies):
- 270 g all-purpose flour
- 6 g baking powder
- 1 packet vanilla sugar
- 100 g butter
- 90 g sugar
- 1 egg
- 40 ml strong black coffee
- A small pinch of salt
For coating:
- 3-4 tablespoons granulated sugar
- 3-4 tablespoons powdered sugar
Preparation:
- Brew strong black coffee, measure 40 ml, and let it cool completely.
- In a small bowl, mix the flour, baking powder, and salt.
- In another bowl, use an electric mixer to beat the butter, sugar, and vanilla sugar until creamy. Add the egg and a pinch of salt, then mix briefly. Add the cooled coffee and mix again until well combined. Finally, add the flour mixture with baking powder and mix thoroughly with the mixer.
- Cover the bowl with plastic wrap and refrigerate for at least one hour to chill.
- Scoop small portions of the dough (about 14-15 g each, roughly the size of a hazelnut) using a teaspoon and form them into balls. Roll each ball first in granulated sugar (you can pulse it briefly in a grinder if preferred) and then generously in powdered sugar.
- Place the balls on a baking sheet lined with parchment paper, leaving at least 4 cm of space between each to allow spreading during baking.
- Bake in a preheated oven at 180°C for about 15 minutes.
- Remove from the oven, transfer to a wire rack, and let cool. Serve immediately with coffee or store in a tin box, where they will stay fresh for up to 10 days.
